Here's a fresh taste of summer!
1 x 125gm pot of cherry mozzarella
2 cups watermelon balls (if you have a melon baller) or cubes, seeds removed, flick them out with the end of a skewer.
Fresh basil leaves
1/3 cup balsamic vinegar
1 teaspoon of brown sugar sea salt and ground pepper bamboo skewers
In a small pot, bring the balsamic vinegar and sugar to a boil.
Continue to boil until it has reduced to about 1/2 the volume it will have become a syrup.
Set aside and allow to completely cool.
You can make the balsamic syrup ahead of time and refrigerate or pop it in the freezer to cool quickly.
Thread basil, mozzarella and watermelon onto the skewers, place on serving plate and drizzle with the balsamic.
Season with salt and pepper.
