This Bite NZ inspired recipe is a weekend brunch favourite, or an easy whip together dinner. Everyone will love this comforting hash!
Serves: 2 Prep Time: 15 Minutes Cook Time: 10 Minutes
Olivado Extra Virgin Avocado oil
Half an onion, finely chopped
200g cooked bacon strips, diced (we love Hellers)
2 cups cooked potatoes, cubed (we love Vivaldi Gold)
1 tbsp worchester sauce
2 tbsp fresh parsley, chopped
To serve: fried egg and avocado
1. Bring a heavy based pan to a medium heat with a generous drizzle of avocado oil. Once hot, saute the onion until it comes translucent. Set aside in a bowl.
2. Add some more oil to the pan, and fry the ham and potato until crispy and golden. Return the onions to the pan, and stir through with the worchester sauce.
3. Sprinkle with parsley before serving, and top with a fried egg and avocado.
