Everyone loves a great burger, and this one has crunchy crumbed fish as the star of the show! Paired with lemon pepper mayo and baby spinach, this burger is not to be missed.
Serves: 4 Prep Time: 10 Minutes Cook Time: 20 Minutes
4 crumbed fish fillets (we love United Fisheries)
1/2 cup mayonnaise (we love Best Foods)
Zest and juice of 1 lemon
4 ciabatta buns
2 cups baby spinach
1/4 cup thinly sliced red onion
Tomato relish (we love Barker’s of Geraldine)
- Preheat your oven and cook the fish fillets as per packet instruction.
- In a bowl, combine the mayonnaise, lemon juice and zest, and salt and pepper to taste. Set aside.
- To build the burgers, spread the base of the buns evenly with the mayo mixture. Top with the cooked fish fillet, followed by spinach and red onion. Spread the top cut side of the bun with relish, press down on top of the burger and serve.
