This one-pan brunch recipe is delicious and easy. Potatoes, mushrooms, Chorizo sausage and relish. What more could you ask for ?
700g Wilcox Dig Me Baby Roasters potatoes
1 brown onion
1 red capsicum
1 clove of garlic, finely chopped
Fresh rosemary sprig
1 teaspoon fresh Thyme leaves
2 teaspoons paprika
2 tablespoons olive oil
2 chorizo sausages, cut into chunks
1 250g punnet of Meadows kebab mushrooms
Maison Therese Tomato Relish
Chopped fresh parsley to garnish
Preheat the oven to 220 degrees Celsius bake or 200 degrees fan bake.
Cut the potatoes into small cubes, then dice onion and capsicum. Mix together.
Add garlic, rosemary sprig, thyme, add chopped chorizo and the whole mushrooms.
Toss together then spread over an oven tray and drizzle over the olive oil and sprinkle over the paprika.
Place in the preheated oven for 30 minutes.
Shake tray gently during cooking to get golden, crisp potatoes.
Remove from the oven and garnish with chopped parsley.
Serve with Maison Therese tomato relish on the side.
