RECIPE: Annabelle White's Mince and Potato Hot Pot
It's Wednesday, which means Annabelle White shares her 'recipe of the week' with us! Today: how good does this Mince and Potato Hot Pot look!
4 medium potatoes, peeled and sliced thinly(thinnest slice on food processor)
1 Tbsp olive oil
1 onion, chopped
3 Tbsp tomato sauce
3 Tbsp Worcestershire sauce
Salt to taste
Pepper to taste
60 g butter
1/4 cup flour
2 cups milk
1 cup grated tasty cheese
Olive oil spray
Additional grated cheese for topping
Preheat oven to 180 deg C. Place sliced potatoes in bowl with enough salted water to cover.
Heat oil in a medium fry pan over a medium heat, stir in mince and cook until evenly browned, drain excess fat and add onion, tomato sauce and Worcestershire sauce. Season to taste. Cook until onions are tender.
In a medium pot over a medium heat melt the butter and stir in the flour. Gradually stir in the milk. Cook and stir for 5 minutes or until thickened. Reduce heat and stir in the grated cheese. Season with salt and pepper to taste.
Line a medium casserole dish with half of the drained potato slices. Pour in the mince mixture.
Cover with cheese sauce mixture and top with remaining potatoes.
Lightly spray the potatoes with olive oil spray and sprinkle a hand full of the grated cheese over the top.
Bake in the preheated oven for 45 mins or until lightly browned.
