RECIPE: Beautiful Macaroni 'N Cheese!

MAC N CHEESE RECIPE - Thanks to Catherine!

2 1/2 cups macaroni
Couple slices of pancetta, diced
2 cups of cream
1 cup grated cheddar
2 cups grated Gruyere
1 cup grated Parmesan
2 teaspoons Dijon mustard
1 clove garlic, crushed
1/2 tablespoon paprika
2 tablespoons chopped fresh chives, extra to garnish.


1. Place pancetta in large saucepan and cook over high heat, stirring for 4mins or until well-browned and slightly crisp.

2. Drain on paper towels. Reduce heat to medium, stir in the cream and simmer.

3. Add cheeses, garlic, mustard, and paprika and stir for 5 mins or until the cheeses have melted and the sauce has thickened. Season.

4. Add macaroni and pancetta and stir for 1 minute or until heated through. Stir in the chives, garnish with extra chives and serve.
