Sri Lankan food has never been more popular, with celebrity chefs like Nadia Lim and Nigella travelling through the country and posting photos all over social media.
Food and NZ Cricket mentor Kit Perera joins Trudi Nelson on Weekend Life to talk about the nutritional elements and Sri Lankan cuisine and why you should give it a go.
Mr Perera was taught to cook at a very young age by his grandma in Sri Lanka, and now he’s passing his knowledge onto the next generation.
Sri Lankan curries are very light and nutritious.
He’s using food as a way to teach children “better nutrition as well as coaching cricket”.
Typically Sri Lankan curry is based around one protein curry and lots of vegetable curries, served with rice and coconut sambal.
Mr Perera says that the secret recipe for his Ayurvedic spice blend has many health and healing properties and goes back centuries. It includes a lot of the ‘c’ spices: cardamom, cloves, cinnamon, coriander, curry leaves, cumin.
