This fun and nutritious coating works well on fish or chicken, and is a healthier alternative to breadcrumbs. Omit the chilli flakes for a family-friendly dish!
Quinoa-crusted chicken drumsticks
1 cup cooked quinoa
2 Tbsp sesame seeds
1 tsp ground cumin
1tsp ground coriander
1 tsp flaky salt
1 tsp freshly ground black pepper
1 tsp smoked paprika
1 tsp dried chilli flakes
12 chicken drumsticks, skin on
3 Tbsp olive oil

Preheat your oven to 180°C. Line an oven tray with baking paper.
In a bowl, toss together cooked quinoa, sesame seeds, cumin, coriander, salt, pepper, smoked paprika and chilli flakes.
Rub chicken drumsticks with oil and toss them through the quinoa mix, pressing firmly until coated. Place on the lined baking tray and roast for 35-40 minutes, turning once, until golden brown and chicken is cooked through.
