Grilled broccoli and red onion salad by Jenny Smith:
Honestly this recipe is so simple, but it is a different idea that I don’t think many will have tried and honestly it is really really good.
1 Red Onion
1-2 Tbsp of your favourite cooking oil
1 Tbsp rice wine vinegar
1 Tbsp of liquid honey
Simply chop the broccoli ends off 1 broccoli into very small pieces 1 cm by 1cm size.
Slice a red onion into 2mm half moon sizes.
Toss in cooking oil.
Pop into a preheated oven and grill at 200C for 10 minutes, toss, then grill for a further 10 minutes.
When cooked the veggies will be slightly brown on the edges giving it a delicious depth of flavour.
Then whisk together honey, and vinegar, taste and adjust to your tastes.
Pour over the veggies and you’re done.
