In honour of Wendyl's last show, MermaidMary has created a special cocktail just for her, The Green Goddess Cocktail:
45ml of Vodka (or gin if you like)
15 ml St Germain
Handful of mint
Juice of 1/2 lemon
Juice the cucumber and mint. You don’t need to peel the cucumber. (but you can if you want).
Strain the mixture to remove any pulp.
Put the vodka, St Germain, lemon juice & the green mixture into a shaker with ice.
Shake and strain into a tall glass over ice. (or shake and dump all of the contents into a tall glass).
Garnish with a sprig of mint and cucumber.
