Friday night cocktail by MermaidMary: Blackberry Prosecco Mojito
30 mls Blackberry Syrup
¼ cup of blackberries
One lime cut into quarters
10(ish) mint leaves
40 mls white rum
You can use premixed syrups but I always say fresh is best and if you want to make the Blackberry syrup it’s easy! Just put a cup of Blackberries in a pan with ⅓ cup of sugar & a couple of tablespoons of water. Heat on medium until it all meshes together & depending on how thin or chunky you want it you can strain it. Cool & keep in the fridge.
In a cocktail shaker muddle the blackberries, blackberry syrup, limes & mint leaves.
Add the rum & ice & shake well.
Strain into a short glass & top up with Prosecco.
Garnish with mint & blackberries.
