Weekend Treats: Pumpkin seed energy balls

Pumpkin Seed Energy Balls

150g pumpkin seed butter (or “no nut spread”)
½ teaspoon turmeric powder
Drizzle of olive oil
¾ cup dates
2 Tablespoons pumpkin seeds
¼ cup cranberries
¼ cup dessicated or threaded coconut
¼ cup dried blackcurrants ( or you can use blackcurrant powder)
1 Tbs honey (optional)

Pile all the ingredients into a processor and process until you are happy with the consistency.  You can drizzle in more oil if the mixture seems a little dry. Make sure you feel it though, because you just need it to hold together - you don’t want it too oily.

You can roll these balls in extra blackcurrant powder.  You could even drizzle with melted dark chocolate.

They are a perfect energy snack for kids sport!
