Mate With a Plate: The Lucky Taco's Pico de Gallo

Pico de Gallo by The Lucky Taco

Ingredients:
4 large ripe tomatoes (quartered & seeds removed). 
4 garlic cloves (finely diced).
Quarter of a small white onion (finely diced).
1 Jalapeño (finely diced).
Handful coriander leaves (chopped roughly).
Juice of 1 lime
Zest of half lime or lemon
Salt & pepper to taste 

Method:
Chop tomatoes into small 1cm cubes. 
Add into large bowl.
Add all other ingredients & mix well.
Add seasoning & taste. 

Should be tangy, sweet, zesty & spicy.
