Friday Night Cocktail by MermaidMary.

This cocktail is from the most amazing bar in San Francisco called Smuggler’s Cove, it is a small three level bar and when you walk in the door & it takes a moment for your eyes to adjust to the dark, but when they do you find yourself in a fully pirate themed bar. It’s small & dark with amazing drinks & a fun clientele. 

This is the definition of what American’s refer to as a dive bar & they are known for their great rum cocktails. 

The Dead Reckoning 

Ingredients:
30 mls soda water
30 mls fresh lemon juice 
30 mls pineapple juice 
15 mls maple syrup 
15 mls vanilla brandy (you can make this by adding a vanilla pod into brandy)
15 mls tawny port 
60 mls aged/dark rum 
1 dash of Angostura bitters 

Method:
Put the soda water into a tall glass.
Add the rest of the ingredients into a a shaker with ice & shake!
Strain into the glass over the soda water and garnish with a decent sprig of mint and a long lemon rind spiral.
