With the rise of soup sales in posh pouches rather than tins, homemade soup can still trump anything you can buy - so what's your favourite flavour?

Heather Cole's "Cullen Skink" Smoked Fish Soup
Cullen skink is an old Scottish soup from the home of haddock. You can add vegetables such as finely cubed parsnips and carrots for a full meal.
- 1 large onion, chopped
- 50g butter
- 500g smoked fish, flaked or filleted
- 500ml water
- 500ml fish or chicken stock (or milk)
- 225g mashed potato
- salt and pepper
- 1 tablespoon finely chopped parsley
- Generous slosh of cream
- Saute onion in butter until soft.
- Add fish and water and simmer for 10 minutes.
- Stir in mashed potato and mix well.
- Add stock, simmer for another 10 minutes, season to taste and serve with a good dollop of cream or sour cream and sprinkle with parsley.

The unusual upright English beech Fagus syvaltica ‘Dawyck’, which comes in green, gold, or purple-leafed variations. Deciduous and gorgeous.
Magnolia ‘Burgundy Star’ grows flat against a wall or spreadeagled along a boundary fence. Dark red/purple blooms in late winter/early spring and lovely lush foliage. Deciduous.
The evergreen magnolia ‘Teddy Bear’ is a fantastic new tree that grows straight out and keeps its branches tightly held. Lovely dark glossy foliage with classic white flowers.
Thuja 'Smaragd'. Hard to say but easy to grow! This cone-shaped evergreen conifer makes a great potted Christmas tree or no-clip topiary.
Acer palmatum ‘Skeeter's Broom’ is a beautiful Japanese maple with a very upright habit. Adds grace and softness to a small garden.
For a nice and skinny native, check out Hoheria angustifolia. The narrow-leafed lacebark is very columnar while young, with white flowers.
