The rules on centre pieces....

The general rule for a centrepiece height is that it should never be so tall that your guests cannot see each other across the table and carry on a conversation. The highest point of the centrepiece should be well below eye level; the maximum height should be 12 inches.

 

One must always consider the width and fullness of the arrangement as you need adequate space for the place settings as well salt and pepper shakers, bread baskets and gravy boats and when it comes to ‘candles’ they are of course are elegant and festive but take care!  Avoid placing candles where the flame is at eye level. The flickering flame is distracting when you're trying to talk across the table and avoid placing candles that are too low as they could be bumped by serving dishes or possibly catch a sleeve while passing around a dish dishes and the last thing you want is a fire to start, trust me!
