Annabelle White's recipe for today - Savoury Bread Cases

Annabelle White is still in Los Angeles, but is returning home tonight. Her recipe for RadioLIVE listeners today is 'Savoury Bread Cases'.

It comes to us courtesy of her website

ANNABELLE SAYS: "This is a great way to use bread instead of pastry for canape or lunch box suggestion."

(One loaf has 17 slices – we will use 12 for the muffin tray)

12 slices of bread – sandwich bread is great, but you can use toast.
Cut the crusts off the bread – taking care to remove them all as any crust on the bread will affect the overall success of the cases.
Roll out the bread with a rolling pin. Butter one side and place butter side down into muffin pan.

Mix together in a jug;
4 eggs
400 ml milk
Salt and pepper
2 tbsp finely chopped parsley*

(* parsley optional)

Into the bread cases divide up the following and place in the muffin trays.
3 rashers bacon, rind removed and chopped
3 tbsp finely chopped spring onion
6 tbsp grated cheese
6 tbsp chopped sundried tomato

Pour the egg custard over the filling and bake 160degC for 25 mins or until golden.
