Des Harris' pavlova recipe


This week Des Harris has given Annabelle White a yummy recipe for pavlova you dont want to miss ! We are yet to make it ourselves but for those who are eager to try it here's the recipe.


300g egg whites

300g caster sugar

Vanilla essence

Malt vinegar

265g icing sugar

35g cornflour 


Beat egg whites for 2-3 minutes so they are soft.

Slowly add caster sugar to the bowl. 

When mixed well sift in icing sugar and cornflour and gently fold through the stiff egg mixture.

Add a splash of vanilla and a dash of malt vinegar.

Place on a baking tray. Bake at 140 degrees celcius for 1 hour. 

Cook at 120 degrees for a further hour.

.Turn off and leave in oven overnight or for a few hours.

Des says if you have another good baking time formula for your pav then use that as results will vary with ovens but he suggested the above - good baking!
