Harry Allenby joins Annabelle White on RadioLIVE from Huami Bar and shares his recipe for the Lady Gatsby Daiquiri.
An elegant combination of rose petals, Manuka leaves, cinnamon, green tea, Manuka honey, fresh lime juice and white rum, incorporating certified organic tea from award-winning local tea producers Zealong.
Lady Gatsby Daiquiri
- 60mL El Dorado 3yo rum
- Zealong Lady Gatsby tea, a blend of Manuka leaf, cinnamon, rose petal, green tea
- 1 heaped teaspoon Manuka honey
- 20mL fresh lime juice
- Dehydrated lime wheel or substitute fresh lime
To infuse the rum, get one bottle of rum, add four heaped teaspoons of the Zealong Lady Gatsby tea, combine and let sit for at least an hour, then strain out the tea and you have a tea-infused rum.
Add tea-infused rum, honey and lime juice to a cocktail shaker filled with ice. Shake, taste and adjust if needed. Double strain into a chilled Coupette glass.
Float dehydrated lime wheel on top, or substitute with a slice of fresh lime
