Annabelle White: Cake Pops



If you are after something yummy this Christmas, Cake Pops are the way to go! dig into this cheeky recipe if you feel like a treat.

Makes 24


60g butter

½ cup sugar

1 teaspoon mixed spice

½ teaspoon cinnamon

½ teaspoon ground ginger

½ teaspoon bicarbonate of soda

200g mixed dried fruit

½ cup water

¼ cup brandy, rum or whisky

1 teaspoon bicarbonate of soda

1 egg, lightly whisked

1 cup plain flour

1 teaspoon baking powder

½ teaspoon ground nutmeg, to serve


Place the butter, sugar, spices (except nutmeg), bicarbonate of soda, mixed dried fruit, water and brandy, rum or whisky in a medium saucepan.  Bring to the boil and simmer for one minute. 

Remove from heat and allow to cool for 15 minutes.

Turn oven on to 170°C.  Grease 2 cake pop tins (base and top).

Whisk the egg and add to the fruit mixture, then add the flour and baking powder and mix until well combined.  Pour into the prepared tins, filling the base tin up to rim of each cake pop hole.

Place cake pop tin ‘lid’ on top.


Bake for 10 to 15 minutes until a metal skewer inserted into the centre comes out clean. 

Leave to stand in tins for 3 minutes, the remove from tins.

Serve drizzled with custard that has been flavoured with rum, brandy or whisky.  Sprinkle with nutmeg.  Serve with vanilla ice cream.

Alternatively, decorate tops with a little melted white chocolate and pieces of glace  cherries, red and green.
