Buffalo cherry salad with marinated figs and walnuts

Looking for a little inspiration in the kitchen? Maybe this is it!


8 mozzarella cherries
2-3 cubes marinated buffalo cheese
4-5 fresh figs
1/3 cup of walnuts
3-4 mint leaves shredded mixed salad greens
2 tablespoons butter
2 teaspoons of soft brown sugar
1 tablespoon of olive oil
1 tablespoon of balsamic salt and pepper


Cut figs in half and sprinkle cut side with 1 teaspoon of brown sugar.

Melt a tablespoon of butter in a small heavy bottom pan and cook the figs cut side down till just browned you want them caramelised but not soft.

Transfer the figs to a plate to cool.

Melt the remaining butter over a low heat and combine with the sugar in the pan.

Add the walnuts and cook for 5 mins stirring constantly, remove from heat once browned and cool.

Mix Balsamic and olive oil with a fork.

Arrange remaining ingredients on a platter, drizzle with oil and balsamic, season and serve.
