Grace Kreft from Sweet Bakery & Cakery is our Weekend Treats guest today and here is her recipe for fudge biscuit slice.
1.5 cups caster sugar
½ cup brown sugar
2.5 tbsp cocoa
500g (2 packets) Wine Biscuits, crushed (some bigger chunks and some ground bits)
3 eggs, lightly beaten
170g milk chocolate (we use Whittaker's Creamy Milk)
½ cup cream
To make the base:
Put the following ingredients in a pot on the stove and melt, stirring occasionally until the butter is melted.
Transfer mixture to a large bowl. Add the crushed biscuits and the eggs, and mix everything together.
Press mixture into an approx. 20x30cm paper-lined tray.
To make the topping:
Put the chocolate in a heat-proof bowl and set-aisde.
Heat the cream in a pot on the stove, until it's just boiling.
Remove the cream from the heat, and pour it over the chocolate (don't stir yet).
Leave to sit for 5 minutes, so the chocolate melts in the heat of the cream.
Stir quickly, until all the chocolate is melted and combined.
Pour the topping over the base.
Chill in the fridge to set for at least 2 hours before cutting (ideally chilling overnight makes cutting easier).
Cut slices and enjoy!
