The MermaidMary Cocktail this week is from that most royal sounding of spirits, Beefeater Gin.
This is the Windsor G&T
A special variation on the G&T with an extra citrus note thanks to the classic British taste of Earl Grey tea.
30mls of Beefeater 24
15ml fresh lemon juice
10ml Earl Grey tea syrup
Firstly you have to make Earl Grey tea syrup, which is actually really easy – soak a teaspoon of loose leaf Earl Grey tea (or a teabag, let's be honest, that's most likely) in 200ml of warm water for an hour. Pour into a saucepan and bring to boil. Add 100g of sugar and simmer for ten minute. Remove from heat and cool.
Then add Beefeater 24, lemon juice and your amazing Earl Grey syrup to a tall ice filled glass and mix well.
Top up with Tonic & garnish with lemon.
