Weekend Treats: Jo Seagar's crunchy peanut butter biscuits

Crunchy Peanut Butter Biscuits (GF)

A quick and easy gluten free recipe that gets top raves from all peanut butter lovers.

Prep time 2 minutes
Cook time 20 minutes
Makes 24

2 cups crunchy peanut butter
2 cups caster sugar
2 eggs

Preheat oven to 170˚C. Line a baking tray with baking paper.
Place all ingredients into a bowl and mix well.
Spoon teaspoonfuls of mixture onto the prepared tray, leaving room for spreading.
Flatten each with a wet fork.
Bake for 15 – 20 minutes or until light golden brown.
Cool on a wire rack and store in an airtight container for up to ten days.
