MermaidMary's cocktail of the week: The Clover Club

Rogue Gin has gone Rogue as it's now known as Scapegrace Gin. But "Scapegrace" is the 18th-century word for Rogue and the only thing that has changed is the name, it is still the same delicious NZ made gin we know and love. 

To celebrate this and the fact that Scapegrace are taking part in the Gin Jubilee - a 10 day festival dedicated to gin (yeah, you heard me) happening in Auckland right now, here is an amazing gin cocktail from the team at Scapegrace. 

Clover Club.
45ml Scapegrace Classic
30ml freshly squeezed lemon juice
20ml raspberry syrup
20ml egg white
1 x dash chocolate bitters

Add all ingredients into a shaker and dry shake, then finely strain into a chilled glass. Garnish with (edible) flowers and/or freeze dried raspberries.
