This week Wendyl Nissen is in charge of your Friday night cocktail. Here is the recipe for an Autumn Thyme Sour, one of her favourites.
60ml Juno Autumn 2018
30ml raw apple juice
1 egg white
Garnish – fresh thyme sprig
Muddle blueberries or press with the back of a spoon.
Pour Juno Gin, Apple juice, honey (or sugar) and egg white in cocktail shaker.
Shake vigorously until egg white is incorporated into drink.
Add ice, shake vigorously until there is a light foam formed.
Strain into glass over ice.
Garnish with blueberries and a fresh thyme sprig.
