MermaidMary's cocktail of the week is from Coley & Punch and is called The Wisdom of Sage.
Coley & Punch is a cocktail bar on Princes Wharf that is open from 4pm daily and describes itself as ‘Not a venue. Not a catwalk. Not a hideout. A bar.’
This bar’s name is inspired by Ada ‘Coley’ Coleman first female headbar - she worked in The Savoy Hotel in London from 1903 - 1925
The Wisdom of Sage:
60 ml gin
15 BlackBerry liqueur (or blackberry syrup)
5 ml of Laphroaig 10 (or any peaty scotch)
20mls fresh lime
20mls grapefruit juice
Heaped teaspoon of Blackberry jam (yes, jam)
Handful of fresh sage leaves
One egg white
Add all ingredients into a shaker & dry shake
Add ice & shake again
Strain into a coupe
Garnish with sage leaves & lemon twist and (if you have them freeze dried blackberries)
