Wendyl Nissen's Mate with a Plate today is Belinda and Jarred Mckay from Puha & Pakeha. Here is their recipe for lamb and horopito bites with watercress sauce.
LAMB & HOROPITO BITES WITH WATERCRESS SAUCE
Makes 15 serves
1kg Lamb mince
14g Garlic – crushed
100g Brown onion - finely diced
2tbsp Smoked paprika
1 Whole red chilli diced
Optional 2tsp Dijon mustard
Gently sauté garlic, onion, cumin & smoked paprika in oil.
Allow to cool.
Mix all other ingredients together in a bowl and add the garlic, onion, cumin and smoked paprika.
Roll into bite size shapes.
Cook on a grill.
1 Spring Onion - chopped
1 Tbsp Lemon Juice
1 Tbsp Horseradish
1/2 tsp Salt
1/4 tsp White Pepper 250g Sour Cream
Place all ingredients in a food processor or bowl with stick blender. Process/blend until all ingredients are finely chopped and blended through the sour cream.
