Mate With a Plate: Richard and Kenina

in Auckland and share this fantastic recipe from Chef Robert Oliver.

Ika Mata Kai Pasifika

Ingredients for the fish and salad:

·        80 gm thin sliced sashimi tuna

·        2 tab small diced firm mango

·        1 tab minced spring onions

·        1 tab fine diced green capsicum

·        1 tab fine diced red capsicum

·        1 tab fresh grated coconut

·        1 teaspoon lemon juice

·        sea salt

·        minced chilli

·        micro coriander for garnish ( optional)

Ingredients for the miti ( coconut dressing):

·        1 cup kara coconut cream

·        1-2 fine chopped chilli

·        3 tab fine minced spring onion

·        2 tablespoon lime juice and zest of 2 limes

·        1 tsp sea salt and some fresh ground black pepper

Mix together

To assemble:

·        Lay the fish on the plate

·        Brush with the lemon juice and season with salt and pepper

·        Garnish with the mango, capsicum, spring onions and fresh grated coconut

·        Dress with the dressing and garnish with coriander
