MermaidMary's cocktail of the week: Pisco Sour

The (Ultimate) Pisco Sour by MermaidMary:

Madame George on K Road is owned by Pablo & Matt is both a bar & restaurant that always strives to push boundaries and do interesting things. The setting is small  & humble, the welcome is warm, the service is impeccable and as for the drinks....I think I've found my new favourite cocktail bar.

Pablo is Peruvian so he takes his Pisco VERY seriously, in fact he imports his own Pisco and infuses his own flavours for cocktails.

Ingredients:
40mls Pisco (Peruvian Grape Spirit)
20mls Fresh Lemon Juice
15mls Sugar Syrup
Dash of Egg White

Method:
Put all together into a shaker & dry shake (no ice) first then add ice, shake again & strain into a coupette glass. Bliss.
