Helen Jackson - Saturday 6am - 10am

Helen Jackson has clocked up 10 years hosting food related programmes on both RadioLIVE and Radio Pacific.

While Helen is passionate about great food, with three young children and a busy working life, Helen understands that meals must be quick and easy without compromising flavour. Helen has a focus on cooking and living seasonally and tries in her spare time to keep her fruit trees and vegetable garden maintained.

After a stint as a primary school teacher, Helen has spent over 15 years immersed in food and is the food editor of New Zealand Womans Weekly, runs her award winning website foodlovers.co.nz, has regular spots on Good Morning TV One as well as co-hosting the RadioLIVE Kitchen and Garden Show.

Recipe for corn fritters

Helen Jackson's recipe for corn fritters. Makes four.

Ingredients

2 cups corn kernels (can used canned or frozen)
3 spring onions, finely chopped
1 small red capsicum (pepper), finely chopped
3 eggs, separated
3/4 cup self raising flour
1/2 teaspoon baking soda
2 tablespoons milk
salt and freshly ground black pepper
25g butter

Method

Mix together corn, spring onion and red capsicum in a bowl.
Mix egg yolks into the corn and then flour and baking soda dissolved in milk.
Beat egg whites until soft peaks and fold into the corn mixture.
Heat butter in a frying pan until sizzling and cook 1/4 cupfuls of mixture until golden on both sides.
