Root crops, slices and fudges

Kumura

By Helen Jackson and Tony Murrell

Gordon Collier recently caught up with a family who is the current generation in a long line of Chinese families growing the best root crops commercially in New Zealand.

We’ll catch up with Kerry Young on Saturday and learn why some of the best carrots and spuds do so very well at the foot hills of Mt Ruapehu. Along the theme of carrots, let us think of some of our favourite carrot recipes – soup, fritters and salad spring to mind but maybe you have something delicious where carrots are the star.

Our great mates at Tui have even more good news on the gardening front, Katie Carrot has a little something special for you too, that’s coming up after 8.00am.

Garden essentials for the this season? I have my favourites what are yours; who still to this day uses a push hoe?

Take a can of condensed milk with some other bits and pieces and what can you make? Helen has some decadent slices and fudges that all use condensed milk – including this recipe for All Saints Slice.

Looking forward to your company tomorrow.

Hi Helen: I would like to know please what is the substitution for cheese when one becomes dairy free as cheese is practically in everything in some way - Many thanks Lyn

Would you happen to have a recipe for an English bake well tart that could be converted into a slice like the delicious neenish slice you put into the NZWW a few weeks back. With Thanks, Joy

You mentioned a couple of weeks ago that broad beans are self-polinating and this can be assisted by using a sprinkler. My question is, how much force is needed and how fine a spray is required.

Hi Helen, Here is a great fruit cake recipe using condensed milk I got from one of our local cafes monthly newsletter about two years ago. Put in a pot 1 Cup water 250gm butter 1 KG mixed dried fruit 1 Tbsp Vinegar 1 tsp mixed spice Bring to the boil then take off heat and cool a little.Add-1 tsp baking soda and 1 tin of condensed milk, any essences liked. Then Add 2 cups flour 1 tsp Baking Powder 1/2 tsp salt mix well then put into 8" tin Bake 150c about 2 hours. Pour brandy or sherry on whilst hot. Then if desired feed with brandy/sherry weekly. Enjoy your show Kay
