Helen Jackson's recipe for corn fritters. Makes four.
Ingredients
2 cups corn kernels (can used canned or frozen)
3 spring onions, finely chopped
1 small red capsicum (pepper), finely chopped
3 eggs, separated
3/4 cup self raising flour
1/2 teaspoon baking soda
2 tablespoons milk
salt and freshly ground black pepper
25g butter
Method
Mix together corn, spring onion and red capsicum in a bowl.
Mix egg yolks into the corn and then flour and baking soda dissolved in milk.
Beat egg whites until soft peaks and fold into the corn mixture.
Heat butter in a frying pan until sizzling and cook 1/4 cupfuls of mixture until golden on both sides.
