My mother used to make these biscuits for the church fair each year when I was a child, and they bring back a lot of memories. She lost the recipe, but I think this is just about it - at least my three brothers assure me it is. Anyway it has once more become the favourite with the next generation as it was with mine, and I hope you will get a lot of pleasure with it too!
3 cups coconut
2 tablespoons flour
1 teaspoon baking powder
1/4 cup milk
1 teaspoon vanilla essence
Preheat oven to 180 C.
Cream the butter, sugar and vanilla, add the egg and beat well. Add the coconut, flour and baking powder. Add the milk and mix well. Place teaspoon lots on a cold greased tray (or one lined with baking paper). Flatten and allow room to spread.
Bake for approx. 20 mins until golden.
These are very crispy and must be kept in an air tight container.
