Chicken fajitas recipe
2 tbsp olive oil, divided
225g chicken cut into 5cm strips
1 tsp ground cumin
½ tsp salt
¼ tsp pepper
2 cloves garlic chopped
1 medium onion sliced
2 capsicum sliced
8 wholegrain tortillas warmed
Sour cream, salsa, sliced avocado, coriander and lime wedges for serving
1. Season the chicken with cumin, salt and pepper.
2. Heat 1 tablespoon of the oil in a large fry pan over medium-high heat then add garlic and seasoned chicken. Cook for 4-6 minutes or until cooked through. Transfer to plate.
3. Heat remaining 1 tablespoon of oil in the same fry pan and add onions and capsicum. Cook 5-7 minutes or until tender. Add the chicken and toss to combine.
4. Serve in warm tortillas with sour cream, salsa, avocado, coriander and lime wedges.
